So, homemade, stove-top oatmeal is probably my FAVORITE breakfast now-a-days! I’m not talking about the tiny brown packets of instant oatmeal with miniscule dehydrated apples and a clump of cinnamon. I’m talking whole-grain rolled oats simmered and stirred in a pot of milk to creamy perfection. Yum.....
For TWO servings:
1 cup rolled oats
1 cup water
1 cup milk
1 teaspoon cinnamon
1 teaspoon vanilla
1 tablespoon brown sugar
Topping of your choosing! My favorites are (but not all together!):
*peanut butter
*chocolate chips
*chopped apples
*maple syrup
*granola
*pumpkin butter
*Combine the oats, water, and milk in a small saucepan over high heat and bring to a hard simmer
*Reduce heat to low and stir continuously until the liquid is mostly absorbed and the oats are thick and creamy
*Before removing from the saucepan, stir in the vanilla, cinnamon, and brown sugar
*Pour into 2 bowls and top with the toppings of your choosing!
*NOTE: Cooking the oats should not take longer the 7 to 10 minutes!
